Creamy Potluck Potatoes

ingredients

  • 1/4 tsp garlic salt
  • 1/4 tsp black pepper
  • 3 pounds potatoes, peeled and cubed
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 1 3 ounce package cream cheese, softened
  • 2 TBSP butter, melted
  • 3/4 cup shredded cheddar cheese
  • 1/4 cup sliced green onions
  • 1/4 cup milk

    In a large saucepan cook potatoes, covered in enough boiling water to cover, 10 to 12 minutes or just until tender. Drain, and rinse with cold water, rinse again.

    Meanwhile in a large bowl, stir together the soup, sour cream, cream cheese and butter. Stir in 1/4 cup of cheddar cheese, 3 TBSP of green onion, the milk and spices. Stir in the cooked potatoes. Transfer mixture to a 2 quart rectangular baking dish.

    Bake in a 350° oven for 25 to 30 minutes or until heated through. Sprinkle with the remaining cheese, let stand about 5 minutes or until the cheese melts. Sprinkle with the remaining green onion and serve.
