Dad's Mushroom Soup
Dad created this after much experimentation. It is very easy to make. He liked to serve it at their dinner parties.
ingredients
- 1 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, grated
- 1 clove garlic, minced
- 1 lb mushrooms, sliced thin
- 1 tbsp tomato paste
- 3 cups chicken stock
- 4 tbsp sweet vermouth
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 egg yolks
- 2 tbsp parsley, chopped
- 3 tbsp parmesan cheese, grated
- 3 tbsp heavy cream

In a large pot, heat butter and olive oil, Saute onion and garlic until onions are tender. Add mushrooms and saute for 5 minutes.

Add tomato paste, chicken stock, sweet vermouth, salt, and pepper. Simmer for 10 minutes.

Before serving, beat egg yolks in a small bowl. Slowly add some of the hot soup to the eggs in the bowl and mix well. Add eggs to soup stirring rapidly. Add parmesan.

Ladle soup ihnto serving bowls. Sprinkle parsley in center of the bowl before serving.
