SPINACH RICE
ingredients
- 1 cup yellow or Vidalia onion, diced
- 1 bag of spinach, washed & drained
- 1 Tbsp olive oil
- 1 1/2 cups uncooked white rice
- 2 cups water
- dill, to taste
- salt & pepper, to taste
- juice of 1 lemon

Saute onion in olive oil until slightly softened.

Add spinach and turn down heat. Stir to wilt spinach.

Once spinach has cooked down, add 2 cups of water, rice, dill and salt & pepper.

Cook covered over low/medium heat until rice is done and all water has evaporated.

Remove from burner and add lemon juice to taste.
