Favorite Carrot Cake
ingredients
- 2 cup flour
- 1 tsp. baking soda
- 1 1/4 baking powder
- 1/2 tsp salt
- 1 tsp. cinnamon
- 1 1/2 cups sugar
- 1 cup corn oil
- 3 eggs
- 2 cups peeled finely shredded carrots (about 3 large)
- 1 cup crushed pineapple with syrup
- 1 cup chopped pecans
- 1 tsp. vanilla extract

Preheat oven to 350, Grease and flour 9x13 pan.

Measure flour, then sift together in a large bowl with remaining dry ingredients.

Make a “well” in center and add all remaining ingredients. Mix just to moisten, then beat 3 minutes at medium speed of electric mixer.

Pour into 9x13 pan, Bake 40-45 minutes.

Cool, in pan, on wire rack. Frost top.

Maple Cream Icing

3 oz cream cheese,
- 3
1 Tab. butter
- 4
2 cups confectioners sugar
- 5
dash of salt
- 6
3/4 tsp. vanilla extract
- 7
3 drops Maple extract
- 8
1 1/2- 2 Tab. milk
- 9
Cream cream cheese and butter. Mix in sugar, salt and vanilla. Add milk to right consistency.
notes
No cream cheese for icing? Make a butter cream icing and add 1/4 tsp. Maple extract
