Stuffed Artichokes
This was a personal recipe given to me by a retired teacher who is Italian and loves making vegetarian food!
ingredients
- 4 artichokes
- lemon juice
- 1 cup seasoned breadcrumbs
- 1/2 cup grated cheese
- chopped parsley
- 1 egg
- 6 garlic cloves
- 8 tablespoons olive oil
directions

Cut stems and points off of artichokes so they are flat. Wash artichokes thoroughly.

Mix together breadcrumbs, cheese, 3 garlic cloves, half of oil, half of parsley, and beaten egg. Spoon inside the leaves of artichokes.

In pot, set the four artichokes flat. Also add to pot 2 cups of water, remaining oil, remaining garlic, remaining parsley and salt.

Put stove on high for 5 minutes then simmer covered for 30 minutes. Check on the artichokes to ensure they don’t burn. Spoon gravy from pot over artichokes when done.
