Zucchini Bread

Makes 2 medium loaves

ingredients

  • 2 1/2 C shredded zucchini (approximately 3)
  • 1 C vegetable oil
  • 1 t vanilla
  • 2 C sugar
  • 3 large eggs
  • 3 C flour
  • 1/2 t salt
  • 1 t cinnamon
  • 1 t cloves
  • 1/4 t baking powder
  • 1 t baking soda
  • 1 t ginger
  • 1 C chopped walnuts

    Preheat oven to 325 degrees. Grease and flour two 8.5 x 4.5 (1.5 quart) metal loaf pans. Combine first set of ingredients in a mixer on med-low speed until well combined. Whisk second set of ingredients (dry). Add to wet ingredients. Mix until combined.

    Cook 50-60 minutes, until cake tester inserted in middle comes out clean.
