Peasant Salad (Fattoush)
Fattoush is a favorite in Lebanon and is an excellent way to use up stale pita bread.
ingredients
- 1 piece Pita Bread, toasted and torn into pieces
- 1 Cucumber, peeled & diced
- 1 medium Tomato, diced
- 1/2 Green Bell Pepper, seeded & chopped
- 1/2 Spanish Onion, chopped
- 1/2 cup Parsley, chopped
- 1/4 head Romaine Lettuce, torn into bite-sized pieces
- 1/2 cup Arugula Leaves, chopped
- 1/2 cup Water
- 1 tsp Corn Flour
- 1/3 cup Lemon Juice
- 2 cloves Garlic, minced with knife or mortal & pester
- 2 tsp Sumac
- Salt & Pepper

Add the pita pieces in a salad bowl.

Add tomatoes and onions.

Sprinkle sumac over this mixture.

Add cucumber and sprinkle with salt and pepper.

Add all the leafy veggies like lettuce, arugula and parsley.

Mix water and corn starch in a cup.

In a small saucepan, heat until thickened.

Mix lemon juice, garlic and salt.

Pour the remaining dressing over and refrigerate until served.

Sumac is the fruit of a shrub that grows throughout the Middle East and the Mediterranean. It has a pleasant tangy taste with a hint of citrus fruitiness and virtually no aroma.
