Spinach Squares

Velda Teel prepared this recipe for the family reunion held at her sister Ernabeth’s house in Sacramento in 1985.

ingredients

  • 4 tablespoons margarine
  • 1/3 cup grated onion
  • 3 eggs, beaten
  • 1 cup flour
  • 1 cup milk
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 teaspoon dill weed
  • 2- 10 oz packages frozen chopped spinach, thawed and drained
  • 1 lb. Monterey Jack cheese, grated

    Saute onion until limp. Spread on the bottom of 9x13 pan.

    Beat 3 eggs and add flour, milk, salt, baking powder and dill weed.

    Mix together spinach and Monterey Jack cheese. Add to egg mixture above.

    Pour over onions. Bake at 350°F for 35 minutes. Cool 45 minutes before cutting into 1 " squares.

    Freezes well. Reheat at 325° F. for 12 minutes (or until hot).
