Zucchini Bread
Velda Teel’s recipe. This also appeared in the Winter 1986 edition of “All Things Relative”.
ingredients
Mix together in a large mixing bow:- 3 eggs
- 1 cup vegetable oil (scant)
- 2 cups sugar
- 2 cups peeled and grated zucchini
- 3 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon nutmeg
- 3 teaspoons cinnamon
- Add 1 cup chopped nuts if desired
directions
Mix thoroughly and pour into 2 large loaf pans (greased). Bake one hour at 350° F.
