Chocolate Mint Zucchini Bread
Velda Teel’s recipe. This recipe was also included in the winter 1986 edition of “All Things Relative”.
ingredients
- 3 eggs
- 1 cup oil
- 3 teaspoons vanilla
- 2 cups sugar
- 2 cups grated zucchini
- 1/2 cup chopped nuts
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon soda
- 1/4 teaspoon baking powder
- 3 tablespoons cocoa powder
- 6 oz chocolate mint chips
directions
Beat eggs, add oil, vanilla, and sugar. Add rest of ingredients. Mix well. Place into 2 greased loaf pans. Bake 1 hour at 350° F.
