Mixed Berry & Ricotta Parfaits
ingredients
- 2 cups ricotta cheese
- 4 ounces cream cheese
- 4 tablespoons sugar (divided)
- 1 teaspoon vanilla extract
- 3 tablespoon honey
- 3 cups mixed fresh berries (blackberries, blueberries, raspberries, and stemmed/halved strawberries or any combination)
- 1/4 cup fresh mint leaves (chopped)
- 2 teaspoon lemon juice

Blend ricotta, cream cheese, 2 tablespoons sugar, vanilla & honey in food processor until very smooth.

Transfer mix to a medium-sized bowl. Cover bowl; refrigerate for about 2 hours or until cheese mix is slightly set.

While cheese mixture is setting, combine berries, mint, lemon juice and remaining 2 tablespoons of sugar together in medium-sized bowl and let stand for 20 minutes at room temp.

Divide blended cheese mixture evenly in the bottom of 6 parfait glasses. Top each with 1/2 cup berry mix and serve.

Note: to reduce fat and calories, light ricotta and light cream cheese may be substituted.
