Greek Pita Sandwiches
Serve as a salad with pita wedges or assemble into opened pitas as a sandwich.
ingredients
- 1 bunch baby spinach, washed, dried and torn into small pieces
- 2-3 hearts of romaine, washed, dried and torn into small pieces
- 1 English cucumber, diced
- 2 tomatoes, seeded and chopped -- or use a couple handfuls of grape tomatoes slice in half
- 1 green pepper, diced
- 1 small red onion, diced
- 1/2-pound feta cheese
- 1 cup pitted kalamata olives
- Dressing:
- 1/2 cup plus 2 Tablespoons olive oil
- 2 Tablespoons lemon juice
- 1 teaspoon minced garlic
- 1 teaspoon dried oregano
- salt & pepper to taste
- Pita bread

Whisk dressing ingredients together and set aside

Combine salad ingredients and toss with dressing.
