Corn & Avocado Salsa
ingredients
- 1 onion (chopped)
- 1 16 oz. package frozen corn (defrosted)
- 2 cans black pitted ripe sliced olives (drained/rinsed)
- 1 red pepper (chopped)
- 5 garlic cloves (pressed)
- 1/3 cup olive oil
- 1/2 cup lemon juice
- 3 tablespoon white cider (wine) vinegar
- 1 teaspon dry oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 ripe avocados (chopped)

In a large bowl, combine corn, olives, onion, and red pepper

In a small bowl, combine garlic, oil, lemon, vinegar, oregano, salt, and pepper

Pour over corn mixture

Toss to coat and place in refrigerator overnight

Add avocado the next day
