ingredients

  • 1 onion (chopped)
  • 1 16 oz. package frozen corn (defrosted)
  • 2 cans black pitted ripe sliced olives (drained/rinsed)
  • 1 red pepper (chopped)
  • 5 garlic cloves (pressed)
  • 1/3 cup olive oil
  • 1/2 cup lemon juice
  • 3 tablespoon white cider (wine) vinegar
  • 1 teaspon dry oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 ripe avocados (chopped)

    In a large bowl, combine corn, olives, onion, and red pepper

    In a small bowl, combine garlic, oil, lemon, vinegar, oregano, salt, and pepper

    Pour over corn mixture

  • 4

    Toss to coat and place in refrigerator overnight

  • 5

    Add avocado the next day
