Rosebuds Spinach Lasagna Roll-Ups
ingredients
Lasagna- 8 lasagna noodles
- 1Tbsp. olive oil
- 2 large garlic cloves, minced
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
- 1c ricotta cheese
- 1c shredded mozzarella cheese
- shredded Parmesan cheese
- 1 (14 oz.) jar spaghetti sauce (or more) or use sauce recipe below
- Parsley sprigs
- 3/4c chopped onion
- 1 clove garlic, minced
- 3Tbsp. salad oil
- 2 (1lb.) cans tomatoes, cut up (4c)
- 2 (6oz.) cans tomato paste
- 2c water
- 1/2tsp. pepper
- 1/2Tbsp. oregano, crushed
- 1/2Tbsp. basil
- 1 bay leaf

Prepare lasagna noodles as per directions on package. Drain; lay flat until ready to use. Heat oil in 12-inch skillet over medium heat and saute garlic for 2 minutes. Stir frequently in bowl. Combine spinach, Ricotta, garlic and 1/2 the Mozzarella cheese. Spread each cooked lasagna noodle with a heaping 1/4 cup of spinach mixture. Roll up firmly.

Pour spaghetti sauce into 12-inch skillet. Place rolls seam side down in skillet, bring to boil; reduce heat to low, cover and simmer 5 minutes. Sprinkle with rest of Mozzarella; optional: sprinkle with shredded Parmesan - cover - and simmer 5 minutes longer or until rolls are heated through. Garnish with parsley.
Spaghetti Sauce
Cook onion and garlic in oil until tender, but not brown. Stir in the other ingredients one at a time while skillet is on medium to low heat. Simmer uncovered for 30 minutes.
