Mom's Eggplant Parmesan
ingredients
- 1 med. Eggplant, cut into half-inch slices
- Large sliced tomato
- Large sliced onion
- 1/2 cup butter or margarine, melted
- 1/2 tsp salt
- 1/2 tsp dried basil
- 1/4 pound sliced mozzarella cheese
- 1/2 (or more) cup dried bread crumbs
- 2 tsp Parmesan cheese

Preheat oven to 450.

In ovenproof dish, layer eggplant, then tomato, then onion. Drizzle each pile with butter, but reserve some. Add salt and basil.

Bake covered 20-30 minutes. Uncover, add mozzarella. Add leftover butter to bread crumbs, mix until moist and add to eggplants. Sprinkle Parmesan, bake uncovered 10-15 minutes.
