Mandarin Chicken
ingredients
Mandarin Sauce- 1 lg can of stewed tomatoes
- 1 lg can of pineapple chunks
- 2 cups sugar
- 1 cup white vinegar
- 1 TB soy sauce
- 1 small onion (chopped)
- 1 green bell pepper (chopped)
- 1 lb boneless skinless chicken breasts
- Tempura batter mix

Sauce: mix vinegar and sugar until sugar is dissolved. Add tomatoes, soy sauce, pineapples, onion and bell peppers. Boil for 5 minutes and turn to medium heat. Let sauce simmer while preparing chicken.

Cut chicken into chunks. Prepare tempura batter mix as directed on box. put enough oil in a sauce pan to deep fry chicken. Fry chicken until batter is brown.

Remove mandarin sauce from heat and serve with chicken.
