Meatloaf Surprise
Bake at 350° for 1 hour and 15 minutes. Let stand 10 minutes before slicing.
ingredients
- 1 can (14 oz.) diced tomatoes
- 1/2 C. water
- 2 pounds ground beef
- 2 large eggs
- 3/4 C. seasoned dried bread crumbs
- 1/4 C. grated parmesan cheese
- 1 garlic clove, minced
- 1 pkg. frozen spinach, thawed and squeezed dry
- 2-3 C. mashed potatoes (I use instant.)

In a blender at high speed blend tomatoes with their juice and water until smooth.

In a large bowl, mix ground beef, eggs, bread crumbs, cheese, garlic, 1/2 t. salt, 1/8 t. pepper, and 1/2 C. tomato mixture until well combined, not over mixed.

Onto a long sheet of waxed paper, pat meat mixture into 11x9 rectangle. Spread mashed potatoes over meat leaving 1 inch border all around. Place spinach over potatoes; sprinkle with 1/4 t. salt.

Starting at the narrow end, roll meat with potatoes and spinach jelly-roll fashion, lifting the waxed paper to loosen the meat. Carefully place seam side down on 9x13 baking dish.

Pour remaining tomato mixture over the meatloaf. Bake.
