Chicken Quesadillas
These are easier than they taste!
ingredients
- Tortillas
- 1 or 2 Chicken breasts
- 1/2 to 1 lb. Colby/Jack cheese, shredded
- 1 Tomato, sliced
- 1/2 Red onion, sliced
- Olives, sliced
- refried beans, sour cream, guacamolé

Bake chicken at 350° until cooked through, about 30-45 minutes (this can be done well before, even to putting the baked chicken in the fridge until the next day).

Shred chicken with fork or cut into thin slices.

Melt one pat of butter in large skillet over med-low heat.

Lay one tortilla out flat and cover half with chicken, toppings and cheese.

Fold tortilla over and transfer to pan.

Cook until cheese is almost melted.

Carefully flip and cook other side.

Cut into three triangles and serve with refried beans, sour cream and/or guacamolé.
