Tequila Shrimp with limes
ingredients
- 3 Tbsp oil
- 6 Tbsp butter
- 2 pounds shrimp, peeled and deveined
- 1 1/4 tsp salt, divided
- 3/4 tsp chipolte powder, divided
- 3/4 cup chopped onion
- 1/2 minced poblano pepper
- 1/2 cup minced Jalapeno or serrano chilies
- 1 Tbs minced garlic
- 1/4 cup lime juice
- 1/4 cup white tequila
- 1 cup chicken broth
- 2 Tbsp minced cilantro leaves as garnish

1. In lg skillet heat oil, add 1 Tbs butter.

2. Season shrimp on both sides with salt , chili powder and cook until lightly browned -2-3 minutes. Put on platter and cover

3. Add onion, peppers, garlic to pan and cook until soft 3-4 minutes. Add tequila and lime juice and cook until almost evaporated 2 minutes. Add broth and reduce by 1/2 -2-3 minutes.

4. Remove pan from heat and add remaining butter, salt , chili powder. Return shrimp to pan and re-warm, serve with cilantro
