Shrimp Creole

ingredients

  • 1 Tbsp veg oil
  • 1 Tbsp flour
  • 1 medium celery stalk- chopped
  • 1 small onion-"
  • 1 medium pepper-"
  • 14 1/2 oz canned diced tomatoes-drained
  • 2 Tbsp tomato paste
  • 1/4 cup red wine
  • 1 cup chicken stock
  • 1 bay leaf
  • 1/4 tsp paprika, basil, oregano,salt and pepper
  • 1 pound shrimp
  • 2 Tbsp chopped scallions
  • 1 Tbsp parsley
  • 1 Tbsp lemon juice
  • 2 cups brown rice

    1. Heat oil in lg skillet, stir in flour and cook over low heat until smooth- 5 minutes

    2. Stir in celery, onion, garlic,pepper and saute- 5 minutes

    3.Add tomatoes, tomato paste, wine, stock,bay leaf and herbs. Bring to boil and reduce heat

    4. Stir in shrimp and simmer 5 minutes. Stir in scallions, parsley and lemon juice , simmer for 2 minute. Serve over brown rice
