Shrimp Creole
ingredients
- 1 Tbsp veg oil
- 1 Tbsp flour
- 1 medium celery stalk- chopped
- 1 small onion-"
- 1 medium pepper-"
- 14 1/2 oz canned diced tomatoes-drained
- 2 Tbsp tomato paste
- 1/4 cup red wine
- 1 cup chicken stock
- 1 bay leaf
- 1/4 tsp paprika, basil, oregano,salt and pepper
- 1 pound shrimp
- 2 Tbsp chopped scallions
- 1 Tbsp parsley
- 1 Tbsp lemon juice
- 2 cups brown rice

1. Heat oil in lg skillet, stir in flour and cook over low heat until smooth- 5 minutes

2. Stir in celery, onion, garlic,pepper and saute- 5 minutes

3.Add tomatoes, tomato paste, wine, stock,bay leaf and herbs. Bring to boil and reduce heat

4. Stir in shrimp and simmer 5 minutes. Stir in scallions, parsley and lemon juice , simmer for 2 minute. Serve over brown rice
