SPAM Cheesecake

This recipe won the “Best Spam Recipe” in 1997 competition. Will keep your guests guessing as to the secret ingredient.

Ingredients

Crust
  • 3/4 c. seasoned bread crumbs
  • 1/4 c. ground toasted almonds or pine nuts
  • 1/4 c. tsp. ground nutmeg
  • 1/4 c. melted butter
Filling
  • 2 8-ounce containers garden vegetable-flavored cream cheese
  • 3 eggs
  • 1/2 c. crumbled tomato basil-flavored feta cheese
  • 1/4 c. chopped black olives
  • 1 tbsp. all-purpose flour
  • 1 tsp. Italian seasoning
  • 1 tbsp. brandy or 1/2 tsp. brandy extract
  • 1 12-ounce can Spam luncheon meat, grated
Topping
  • 1 c. sour cream
  • 2 tsp. sugar
  • 1 10-ounce jar chutney, pureed
  • 1/3 c. toasted slivered almonds or pine nuts
  • assorted crackers

directions

    1 - Preheat oven to 350°.

    2 - For crust, in small bowl, combine all crust ingredients.

    3 - Gently press into bottom of a 10" spring form pan or pie plate.

    4 - Bake 8-10 minutes.

    5 - Remove from oven; set aside to cool.

    6 - Reduce oven temperature to 300°.

    7 - In a large bowl, beat cream cheese until light and fluffy.

    8 - Add eggs, one at a time, beating well after each addition.

    9 - Stir in next 6 filling ingredients.

    10 - Gently fold in grated Spam.

    11 - Pour into prepared crust.

    12 - Bake 50-60 minutes or until center is almost set.

    13 - Meanwhile, in a small bowl, combine sour cream and sugar.

    14 - Spread over cheesecake and bake an additional 10 minutes.

    15 - Remove cheesecake from oven; cool to room temperature.

    16 - Refrigerate several hours or overnight.

    17 - Before serving, spread chutney over cheesecake and sprinkle with toasted nuts around the outside edge.

    18 - Cut into thin wedges and serve with assorted crackers.
