Pineapple-Zucchini Bread ( Grandma Sue's )
A holiday tradition.
ingredients
- 3 eggs
- 1 cup oil
- 2 cups sugar
- 2 tsp vanilla
- 2 cups shredded zucchini
- 1 can well drained crushed pineapple 8 oz.
- 1 cup chopped walnuts
- 3 cups flour
- 2 tsp baking soda
- 1 tsp salt
- 1/4 tsp baking powder
- 1 1/2 tsp cinnamon
- 3/4 tsp nutmeg
- 1 cup currants or raisins
directions
In a mixing bowl beat eggs,oil,sugar and vanilla until thick. Stir in zucchini,pineapple,flour,soda,salt,baking powder,cinnamon,nutmeg,currants and walnuts. Blend well. Pour into 2 greased 5x9 loaf p[ans. Bake at 350 degrees for 1 hour or until center comes out clean. Makes 2 loaves.
