Black Beans & Rice
ingredients
- 1 Table spoon Olive Oil
- 1 Cup rice
- 2 Cups low-sodium chicken Broth
- 1 Cup canned black beans, rinsed and drained
directions
In a medium saucepan, heat the oil over medium-high. Stir in rice and cook, stirring frequently until the grains are coated and slightly translucent on the edges. Stir in the broth and beans. Bring to a boil over high heat and continue boiling for 5 minutes. Reduce heat to low, cover and simmer for 10 minutes or until the liquid is absorbed and the rice is tender.
