Sushi Rice Salad
ingredients
- 1 1/2 cup basmati rice
- 1 t salt
- 3 cups water
- 1 T toasted sesame seeds
- 1/4 cup + 3 T rice wine vinegar
- 1/4 cup sugar
- 1 1/2 t salt
- 2 T vegetable oil
- 4 scallions
- 1 seedless cuke
- 2 avocados
- 1/4 lb fake crab (optional)
- shredded carrots (optional)
- Dressing:
- 2 t wasabi powder
- 1 T hot water
- 2 T cold water
- 2 T soy sauce

Bring 1 tsp salt and 3 cups water to a boil. Add rice, cover, turn down heat and simmer for about 20 minutes – until all water is absorbed.

Heat 1/4 cup rice wine vinegar with sugar and 1 1/2 t salt. Stir until dissolved. Pour over rice. Cool. Add remaining vinegar, sesame seeds, oil, scallions and cucumber (and carrots if you want). You can prepare up until here a day ahead if you want.

Add avocado and crab. Season with salt and pepper.

Dissolve powder in hot water. Add cold water and soy sauce.

Add to rice mixture.
