Chopped Greek Salad
ingredients
- 1 T red wine vinegar
- 1 t dried oregano
- 1 clove crushed garlic
- 1/4 cup extra virgin olive oil
- pint cherry tomatoes
- 1 green or yellow pepper (I prefer to use yellow – it adds more color)
- 1/2 - 1 seedless cucumber
- 1/2 cup crumbled feta (I use Israeli feta – I think it’s the best)
- 1/2 cup chopped, pitted kalamata olives
- 1 can drained chick peas

Chop all vegetables and cheese.

Pulse vinegar, oregano and garlic in a blender to combine (I just use my little braun hand mixer). With machine running, pour oil in. Toss dressing with vegetables. Can be made ahead of time and refrigerated.
