Chopped Greek Salad

ingredients

  • 1 T red wine vinegar
  • 1 t dried oregano
  • 1 clove crushed garlic
  • 1/4 cup extra virgin olive oil
  • pint cherry tomatoes
  • 1 green or yellow pepper (I prefer to use yellow – it adds more color)
  • 1/2 - 1 seedless cucumber
  • 1/2 cup crumbled feta (I use Israeli feta – I think it’s the best)
  • 1/2 cup chopped, pitted kalamata olives
  • 1 can drained chick peas

    Chop all vegetables and cheese.

  • 2

    Pulse vinegar, oregano and garlic in a blender to combine (I just use my little braun hand mixer). With machine running, pour oil in. Toss dressing with vegetables. Can be made ahead of time and refrigerated.
