Make Ahead Mashed Potatoes -

ingredients

  • 5 lbs of potatoes - peeled and quartered
  • 6 oz cream cheese
  • 1 cup of sour cream
  • 2 eggs whites/beaten
  • 2 TBL butter
  • Salt/Pepper

    Boil potatoes for 20 minutes. Drain. Mash until no lumps. Add cream cheese, sour cream, salt/pepper and egg whites.

    Spray casserole dish with non-stick spray. Add potatoes. Dot with butter. Cool slightly before covering and refrigerating. Take out of refrigerator 30 minutes before baking. Bake covered for 40 minutes in 350 oven.
