Easy Fettuccini Alfredo
With Chicken or Italian Sausage
ingredients
Meat- Meat: chicken tenders or 2 chicken breast, cut into strips or
- 2-4 Italian Sausages, mild, spicy or Andoullein
- 1Tbsp minced garlic
- 1/2 onion or 3 shallots/green onion, finely chopped
- Olive oil or Italian dressing
- Butter
- Dry cooking Sherry/white wine
- Parmesan Cheese
- 1/2 -3/4 cup 1/2 and 1/2
- Large pot with rapidly boiling water, 1/2 t salt added
- 1/2 lb Fettuccini noodles or other
- Cook until soft al dente
- In a large skillet, brown 1 Tbsp minced garlic, 1/2 small onion or shallots, finely chopped in 1-2 Tbsp butter till onions are clear
- Add meat using a small amount of olive oil or Italian salad dressing as needed until meat is brown and juices are ’sticky’ in pan.
- Remove meat to dish to rest and add 1/4 - 1/2 cup dry cooking Sherry /white wine to browning meat to incorporate ’sticky’ juices.
- When bubbling, add 1 cup sour cream, 1/2 cup 1/2 and 1/2 and 1/2 - 3/4 cup Parmesan cheese
- Heat Through but do not boil hard. Add hot noodles.
- Stir Sauce through noodles till heated, adding more 1/2 and 1/2, sherry and parmesan cheese as needed.
directions
Serve noodles on platter with meat on top, sprinkle with Parmesan
