Betsy's Favorite (and easy) Chicken Enchilada Casserole
Quick, delicious and easy casserole. A great way to use up left over chicken.
ingredients
- Chicken, cooked. Any part of the bird. Bought new and baked or boiled for the recipe, or left over from the night before. But you will want at least a cup.
- Shredded cheddar, ’a nice big pile.’
- 1 chopped sweet onion.
- 1 can green enchilada sauce.
- Package of corn tortillas, warmed so they are soft and pliable.

Preheat oven to 375 degrees.

Mix chicken,chopped onion, and enchilada sauce in a bowl.

Spoon into a warm tortilla and roll the tortilla into a greased casserole dish, laying closed side down.

Do this again and again until you fill the dish.

Top with the shredded cheese.

Bake for 30 - 40 minutes.
