Aunt Helen Packer's Texas Cake
This was a family favorite at any Packer Family get together.
ingredients
- I. 2 cups flour
- 2 cups sugar
- 2 eggs
- 1 tsp baking soda
- 1/2 cup sour cream
- 1/2 tsp salt
- II. 2 sticks margarine
- 1 cup water
- 3 tbsp cocoa
- 1 tsp vanilla
- Icing:
- 1 tsp vanilla
- 1 stick margarine
- 6 tbsp milk
- 3 tbsp cocoa
- 1 box powdered sugar
- 1 cup pecans (or English walnuts)

Bring to a boil section II.

Add boiling water mixture to flour, sugar, eggs, etc (section I) while hot.

Mix well and pour into large sheet cake pan (15 1/2 X 10 1/2 X 1).

*This size pan is also called a jelly roll pan.

Bake approx. 20-25 min. @ 350 degrees.

Freezes very well (icing and all).

Icing:

Bring to a boil: vanilla, margarine, milk, and cocoa.

Add powdered sugar

Fold in nuts

Spread on cake while it is still warm.
