Chewy Toffee Pecan Bars

ingredients

  • 2 cups butter, softened
  • 1 cup sugar
  • 4 cups flour
  • 2 7 oz bags Heath bits-o-brickle
  • 1 1/2 cups light corn syrup
  • 2 cups pecan pieces
  • 1 1/2 cups sweetened coconut

    Preheat oven to 350.Grease sides of one 11x15 baking pan or two 9x13 pans.

    Beat butter and sugar until fluffy. Gradually add flour, beating until well blended. Press dough evenly into prepared pan(s). Bake 15-20 minutes or until lightly browned.

    Meanwhile, combine Heath bits and corn syrup in a medium saucepan. Cook over medium heat, stirring constantly, until brickle is melted (10-12 minutes). NOTE: brickle does not melt completely, there will be some chips of nuts in the syrup. Stir in 1 cup of the pecans and 3/4 cup of the coconut.

    Spread the mixture over the bake crust to within 1/4 inch of the edges.

    Sprinkle remaining 1 cup of pecans and 3/4 cup of coconut over the top and bake for an additional 10-15 minutes or until bubbly.

    Cool completely (this takes several hours) and cut into bars.

You can substitute crushed Heath bars for the bits-o-brickle.
