Meat Loaf
A hearty one-dish meal.
ingredients
- 2 lbs ground beef (part regular, part lean)
- 4 slices bread
- 2 eggs
- 1/2 cup milk
- carrots
- red potatoes
- 1 stalk celery, chopped
- 1/4 onion, chopped
- 1/4 tsp poultry seasoning
- 1/2 tsp dry mustard
- 1 Tbsp worchestershire sauce
- chili sauce (or ketchup)

Quarter potatoes and carrots into same-size pieces. No need to peel them. Boil them in water x 20 minutes. Drain and set aside.

Soak bread in milk until soft. Add eggs and beat with rotary beater. Add this mixture to ground beef. Add celery, onion, poultry seasoning, mustard and worchestershire sauce. Using hands, mix togeter very gently without squishing. Divide meat mixture into 2 freeform loaves and place in 2 separate 9x11 pans. Place vegetables around loaves. Put generous helping of chili sauce or ketchup on top of loaves and vegetables. Bake 350 x 1 hour.
