Walnut Gems
Vegan!
ingredients
- 1 1/4 cups whole wheat flour
- 1 1/2 cups old-fashioned rolled oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp salt
- 1/2 cup raisins
- 1 cup chopped walnuts
- 1/2 cup canola oil
- 3/4 cup brown sugar
- 1/4 cup soy milk or cow milk
- 2 tsp vanilla extract
- 2 tbsp flaxseed meal shaken with 6 tbsp warm water

Preheat oven to 350 degrees.

Lightly oil baking sheet.

In a large bowl, combine flour, oats, baking powder, cinnamon, nutmeg and salt. Stir well. Add raisins and nuts and stir again.

In a medium bowl, add the oil, brown sugar, soy milk, vanilla and flax mixture. Stir to combine and then add to the dry ingredients.

Drop the dough by spoonfuls onto the baking sheet about 1 inch apart. Bake for 12 to 15 minutes or until lightly browned.
notes
You can use cows milk instead of soy milk and eggs instead of the flax mixture if you dont want to make it Vegan.
