Bountiful Vegetable Soup
Hearty and Warm Vegetable Soup that soothes the soul.
ingredients
- One medium onion, diced
- 3 cloves garlic, diced
- 3 carrots, sliced or diced
- 1 green pepper, diced
- 8 to 12 oz mushrooms, sliced or chunks
- 1 large or 2 small zucchini, sliced (seeds removed)
- 1/2 lb asparagus, sliced into 1" pieces
- 1/2 bag frozen green beans, about 1" pieces
- 1/2 bag frozen corn
- 1 large can petite diced tomatoes
- 2 cartons reduced sodium chicken broth
- Oregano
- Salt
- Pepper
- Red pepper flakes
- Olive oil
directions
Heat about a tablespoon of olive oil in large soup pot. Add onions and a couple shakes of red pepper flakes and cook about 2 minutes. Add carrots and garlic and cook another couple minutes. Add pepper and mushrooms and cook a couple minutes to bring the water out of the mushrooms. Add remaining vegetables and cook about 2 to 3 minutes. While cooking, add salt, pepper and oregano to taste. Add tomatoes and broth. Simmer for approximately one hour. While cooking, taste and adjust seasonings to your liking.
