Cream Puffs
ingredients
- 1/2 cup flour
- 1/4 tsp salt
- 1/2 cup water
- 1/4 cup butter
- 2 unbeaten eggs
- chicken or tuna salad

Mix flour and salt. Sift onto wax paper. Heat water and butter in saucepan until butter melts. Add flour all at once; beat vigorously over low heat ’until mixture leaves side of pan.

Add unbeaten eggs, one at a time, beating thoroughly after each. Drop small teaspoonfuls on greased baking sheet, 1" apart. Bake at 450 F for 5 minutes, then 400 F for 15-20 minutes. Cut top of puff part way (not all the way through), and stuff

Tuna or Chicken Puffs: Fill with tuna or chicken salad.

Sweet Puffs: If you wish, you can use the puffs for dessert. Drop

tablespoonfuls instead of teaspoonfuls and fill with custard or your favorite ice cream.
