ingredients

  • 1 dozen large eggs, hard-boiled & peeled
  • 6 Tbsp. light mayonnaise
  • 2-4 Tbsp. pickled sliced jalapenos, diced
  • 1 tsp. mustard
  • 1 tsp. dry mustard powder
  • 1/2 tsp. cumin
  • 1/8 tsp. salt
  • scallions as garnish

    Place eggs in saucepan and cover by an inch with cold water. Bring to a rolling boil on high, then promptly reduce heat to medium. Boil 10 minutes. Remove from heat and immediately place under ice cold water to keep bright yellow yolks.

    Cut eggs in half lengthwise and remove yolks. Mash yolks, and stir in other ingredients. Spoon or pipe egg yolk mixture into egg halves. Cover and chill at least one hour and up to 24 hours before serving. Garnish with scallions.
