Spiced and Iced Pumpkin Cookies
Bake at 375° for 8-10 minutes.
ingredients
- 1 C. vegetable shortening
- 1/2 C. sugar
- 1/2 C. packed brown sugar
- 1 1/2 t. pumpkin pie spice
- 1/2 t. baking powder
- 1/4 t. baking soda
- 1 large egg
- 1 C. canned pumpkin
- 2 C. flour

In a medium bowl, beat shortening on medium high for 30 seconds. Beat in sugars and pumpkin pie spice, baking powder and baking soda. Beat in egg and pumpkin. Beat in the flour. Drop dough by rounded teaspoon 2 inches apart onto an ungreased baking sheet. Bake 8-10 minutes until tops are firm.

Transfer to wire rack, cool.

Spread with brown sugar glaze.

Brown Sugar Glaze:

In a small saucepan, combine 1/2 C. packed brown sugar, 3 T. butter, and 1 T. milk. Heat and stir until butter melts. Remove from heat. Stir in 1 C. sifted powdered sugar and 1 teaspoon vanilla.
