Chicken Scarpiello
ingredients
- 1 1/2 C oil
- 6-8 boneless, skinless chicken breasts
- 4 links Italian Sausages, (can be sweet or hot), cut into 1-inch pieces
- 2 large bell peppers,seeded and cut into strips
- 2 jalapeno peppers,seeded and cut into thin rounds
- 1 large sweet onion, cut in half lengthwise and sliced
- 1 t minced garlic
- 6-8 hot vinegared cherry peppers, left whole
- 2-3 small potatoes,peeled, boiled and sliced, (optional)
- 1/2 C chicken broth
- 1/2 C white wine
- 1/2 C red wine vinegar
- 1 T dried oregano leaves
- salt & pepper to taste

Heat oil in dutch oven, brown chicken and remove. Add sausage and saute until browned. Remove and drain. In same pan, saute bell peppers, jalapenos, onion and garlic until soft and beginning to brown. Remove and drain.

Pour oil from pan, Return sausage, chicken and vegetables to pan. Add cherry peppers, potatoes, chicken broth, wine, vinegar, oregano, salt and pepper. Cover and simmer until chicken is cooked through, about 10 minutes. Uncover and cook another 10-15 minutes.
