Chicken or Steak and Dumplings
You can choose to serve these dumplings on top of either tender round steak or chicken and vegetables.
ingredients
Dumplings- 2 cups flour
- 1/2 tsp. salt
- 4 tsp. baking powder
- 1 tsp. poultry seasoning
- 1 tsp. celery seed
- 1/4 cup vegetable oil
- 1 cup milk
- 4 cups cubed cooked chicken
- 6 cups fat-free chicken broth
- 1 tsp. parsley
- 1 cup onion, chopped
- 1 cup celery, chopped
- 2 cups diced potatoes
- 1 cup carrots, diced
- 1 cup green beans (opt.)
- 1 cup peas (opt.)
- 2 lbs. round steak, sliced in thin strips
- 3 tbs. vegetable oil
- flour, seasoned with salt and pepper
- 1 onion, chopped
- 2 cans of cream of chicken soup
- 3 cans water
directions
Dumplings
In medium mixing bowl, add all dumpling ingredients and stir to mix.
Chicken
In a large oven proof pot, saute onions and celery. Add chicken and vegetable ingredients except for peas. Cover and simmer on low for 1 -2 hours. Add peas. Top with large spoonfuls of dumpling dough. Cover and place into 350 degree oven for 15 minutes. Remove cover and bake another 10 minutes.
Steak
Slice round steak in 1/2" strips. Dredge in seasoned flour. Heat oil in large Dutch oven. Add meat and brown with onion. Stir in the soup that has been mixed with the water and bake at 350 degrees for 45 minutes. Remove from oven and top with spoonfuls of dumpling dough. Cover and return to oven. Bake 15 minutes. Remove lid and bake another 10 minutes.
notes
The dumplings absorb a lot of liquid, so don't worry if it looks really soupy before adding the dumplings.
