ingredients

  • 1 green pepper, chopped
  • 1 onion, chopped
  • 3 small tomatoes, chopped
  • 1 lb. smoked sausage, cut into 2 inch pieces
  • 1 Tbsp. butter
  • 1 Tbsp. cornstarch
  • 1/2 tsp. ground ginger
  • 1 Tbsp. vinegar
  • 1 Tbsp. soy sauce
  • 1/2 c. apricot preserves
  • 2 c. drained pineapple chunks
  • Rice

directions

Saute peppers, onions, tomatoes, and sausage in butter. Combine cornstarch, ginger, vinegar, soy sauce, and preserves. Cook over low heat until sauce thickens after stirring into sausage mixture. Mix in pineapple and heat. Serve with rice.
