Apple French Toast Casserole
This recipe is perfect for brunch because it needs to be prepared the night before, leaving nothing to do in the morning but bake! I have made this for playgroup a few times and everyone seems to love it.
ingredients
- 1 1/2 loaves French Bread sliced thin(about 1/8 to 1/4" thick).
- 1 Cup Brown Sugar
- 1/2 Cup Butter
- 1 tsp. Light Corn Syrup
- 2 to 3 Macintosh (or other baking apple) apples sliced thin
- 6 Eggs
- 1 1/2 Cups Milk
- 1 tsp. Vanilla
- Cinnamon to taste

Slice bread and apples prior to making caramel mixture.

Melt butter in a small saucepan over medium heat. Add corn syrup and brown sugar and cook until a caramel mixture is formed.

Pour mixture into bottom of a 9 X 13" pan. Immediately put a layer of apples on top of the caramel. Layer bread on top of the caramel.

Mix eggs, milk, cinnamon and vanilla and pour over bread.

Cover with foil and refrigerate overnight.

Preheat oven to 350°

Sprinkle lightly with cinnamon. Bake uncovered for 45 minutes
