Cheddar Potato Soup
Everybody loves this soup that Melissa makes. She got it from a magazine and made it yummier by adding bacon to it.
ingredients
- 1/3 cup chopped onions
- 1/3 cup chopped celery
- 2 TBSP margarine
- 4 cups diced potatoes
- 3 cups chicken broth
- 2 cups shredded cheddar cheese
- 2 cups milk
- 1/4 tsp pepper
- dash of paprika
- fried and crumbled bacon
directions
Saute celery and onions with the butter in a large saucepan until they are tender. Add potatoes and broth and bring to a boil. Reduce heat, cover the pan, and simmer for 10-15 minutes. Take out a small batch of soup and blend it until smooth. Do this several more times, but be sure to leave some of the soup unblended so you will have some chunks of potatoes,etc. (Beforehand, fry bacon until it is crunchy, let cool, and crumble into small pieces.) Add preferred amount of crumbled bacon to soup. Stir in the cheese and milk until the cheese is melted. Remove the saucepan from heat and serve when slightly cooled.
