Sausage and Kale Soup
I got this recipe from Rachael Ray and loved it! It was even great reheated the next day.
ingredients
- Olive Oil
- 1 lb. Italian sausage
- 1 C. lentils
- 1 medium onion, chopped
- 3-4 cloves garlic
- 1/2 lb. mushrooms
- 1 potato, peeled and diced
- fresh rosemary
- thyme
- salt and pepper
- 1/4 C. tomato paste
- 4 C. chicken stock
- 1 bunch kale

Cook sausage 3-4 minutes. Add garlic, onion, mushrooms, potato, rosemary, thyme, salt, pepper, and tomato paste. Cook 3-4 minutes more.

Add stock plus 2 cups water, turn heat up to bubble. Add lentils and kale. Stir until kale wilts then turn down and simmer 30-40 minutes.
