Parmesan Crusted Chicken

  • 1/2 cup Hellman’s Mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 4 chicken fillets (or boneless, skinless chicken breasts)
  • 2 sun-dried tomatoes, jarred
  • 1 tsp Italian herbs
  • 1 tsp basil
  • cayenne pepper
  • 2 tbsp breadcrumbs
  • Lawry’s garlic salt
  • 1 tbsp Parmesan
  • 1/2 oregano

    Preheat oven to 425 degrees

    Place 1/2 cup of Hellman’s Mayonnaise in a medium sized bowl. Add 1/4 cup of grated parmeasn cheese to the mayonnaise. Next, add a good pinch of cayenne pepper (or black pepper). Then add 1 tsp. dried Italian herbs and 1 tsp basil. Finely mince two oil-packed tomatoes and add it to the mayonnaise mixture. Stir until combined.

    In a separate bowl combine 2 tbsp breadcrumbs, 1 tbsp parmesan cheese, 1 tsp oregano, and a generous amount of garlic.

    Place 4 chicken breasts in an oven proff dish and spread the mayonnaise mixture over the top of each. Next, cover them with the breadcrumb mixture. Place in oven and bake for 20-25 minutes (or until cooked through).
