ingredients

  • 3 lbs. potatoes, boiled until soft
  • Flour
  • Egg, optional

    Mash potatoes. Add flour until potatoes do not stick on either the board or your hands. Do not manipulate too much.

  • 2

    Cut dough into small pieces and roll into pencil-like logs. Cut across into 2 inch pieces. Press down in the center of each piece with finger and roll towards you to create gnocci shape.
