Mushroom Pasta
ingredients
- 2 T. olive oil
- 1 lb. mushrooms
- 3 garlic cloves
- 2/3 C. white wine
- 2 large tomatoes
- 3/4 C. green onion
- 1/2 C. parsley/basil
- salt/pepper
- 8 oz. penne pasta
- Parmesan cheese

Cook penne pasta as directed on the package.

Heat oil, saute mushrooms and garlic. Toss 4 minutes and add wine and bring to a boil, reduce the wine by 1/2. Stir in tomatoes, onion, and herbs until hot. Toss with penne pasta, and add salt and pepper to taste.
