Asian Beef Salad
ingredients
- PEANUT DRESSING:
- 3 tbsp rice wine vinegar
- 1/2 cup apple juice concentrate
- 3 tbsp peanut butter
- 2 inches fresh ginger root, grated
- 1/2 tsp cayenne pepper
- 1/2 cup vegetable oil
- SALAD:
- Mixed Greens
- 1/2 Red Pepper, sliced like matchsticks
- 1/4 Red Onion, very thinly sliced
- Beef sirloin steak
- 1 tbsp chopped nuts (walnuts, peanuts, etc.)

1. Blend all of the dressing ingredients together in a blender.

2. Barbecue steak to medium. Set steak aside for 10 minutes. Then, slice into strips.

3. Toss salad, peppers, and onions with dressing. Layer beef on top and garnish with chopped nuts.
