Chicken Cacciatore
This is from Sweet Basil restaurant in Needham, Massachusetts. A great dish for entertaining because you can have it in the oven while you get everything else ready.
ingredients
- 2 lbs boneless, skinless chicken thighs
- 2T olive oil
- 3 cloves of garlic finely chopped
- 2 carrots chopped
- 3 celery stalks chopped
- 2 medium onions shopped
- 10 white mushrooms, quartered
- 1 cup chopped roasted red peppers
- 2 cups chicken stock
- 1 3/4 cup port
- 3/4 cup balsamic vinegar
- 28 ounce can of crushed tomatoes in puree

Set oven to 400 degrees.

Arrange chicken in 9x13 baking dish and sprinkle with salt & pepper.

Roast for 20 minutes.

In a large skillet heat olive oil.

Cook garlic, carrots, onion, celery, mushrooms and roasted peppers over medium heat, stirring often, for 20 minutes.

Add stock, port, balsamic, tomatoes to skillet.

Bring to a boil.

Pour over chicken and cover dish with foil.

Return to oven and cook for 1.5 hours (yes, you read that right).

Serve with hot farfalle pasta and sprinkle with fresh parmesan.
