Chinese Chicken Bake
This is an easy, one-dish meal that pleases most palates. Great for a work night and makes fabulous leftovers. Most of the ingredients can be increased or decreased to suit your taste.
ingredients
- approx. 1 lb chicken breast, microwaved and chopped into bite size pieces
- chopped celery to taste (I either do one heart or about 6 ribs)
- 1 bunch green onions, chopped
- 2 cans cream of mushroom soup
- 1 can crushed pinapple, partially drained
- 1/4 cup soy or teriyaki sauce
- rice crispy cereal

Preheat oven to 350 degrees.

While the chicken is cooking in the microwave, chop the celery and onions and put in a large casserole dish. Add the soup, pineapple and teriyaki (or soy) sauce. When the chicken is cooked and chopped, add it in.

Stir well to mix.

Pour in about 4 cups cereal, about 1 cup at a time, stirring until all is well combined. Add more cereal if desired, stirring until it is incorporated. Then top the mixture with a layer of cereal.

Bake in oven for at least 20 mins to heat through, but can be left there as long as 40 mins. If you need to leave it longer, turn the heat down.
