Bacon, Cheddar and Scallion Mini-Quiches

- 1 pkg. refrigerated pie crust
- 2/3 lb. bacon
- 1/4 c. scallions
- 1/2 c. whipping cream
- 1 egg
- 1 c. cheddar cheese

Let pie crust stand at room temperature for 20 minutes then roll o ut to 12“ circle. (I used the Pillsbury kind that came pre-rolled - 2-9” crusts per box got me about 11 circles each, after re-rolling.)

Cook bacon until crispy and cut small. Cut scallions.

Preheat oven to 350. Grease muffin tin.

Using 3" cookie cutter cut 12 circles.

Press into muffin tin. Divide bacon & scallions evenly in cups.

Combine egg, cream. Beat well. Pour over tins - 2 tsp. each cup. Sprinkle with cheese.

Bake 18-20 minutes.

To freeze -- cool & freeze in single layer.

To reheat -- place on cookie sheet & bake at 350 for 12-14 minutes.
