Potato Spinach Casserole
ingredients
- 6-8 large potatoes, cooked & mashed
- 1 c yogurt or sour cream
- 2 tsp salt
- 1/4 tsp pepper
- (I used dried dill; anything would work)
- 2 T chopped chives or green onions
- 1/4 c butter or margarine
- 1 pkg (10 oz) spinach, thawed and drained
- 1 c shredded cheddar cheese

Combine all ingredients except the cheese

Spoon into 2 qt casserole

Bake, uncovered, at 400° for 15 minutes

Top with cheese and bake 5 minutes longer

(If you make it ahead and put it into the fridge, increase cooking time
- 6
accordingly)
