Potato Spinach Casserole

ingredients

  • 6-8 large potatoes, cooked & mashed
  • 1 c yogurt or sour cream
  • 2 tsp salt
  • 1/4 tsp pepper
  • (I used dried dill; anything would work)
  • 2 T chopped chives or green onions
  • 1/4 c butter or margarine
  • 1 pkg (10 oz) spinach, thawed and drained
  • 1 c shredded cheddar cheese

    Combine all ingredients except the cheese

    Spoon into 2 qt casserole

  • 3

    Bake, uncovered, at 400° for 15 minutes

  • 4

    Top with cheese and bake 5 minutes longer

  • 5

    (If you make it ahead and put it into the fridge, increase cooking time

  • 6

    accordingly)
